Moroccan Spiced Kebabs with Lemon Yogurt Sauce Serves 4 Ingredients: 1 1/2 pounds Chicken Breasts or Lamb Shoulder (cut into 1 inch pieces 1 Tbsp Olive Oil 1 Tbsp Red Wine Vinegar Juice of half a small Lemon 2 cloves Garlic (minced) 1 Tbsp ground Cumin 1 Tbsp ground Coriander 1 tsp Cayenne Pepper (may add more or less for desired heat level) 1/4 tsp Salt 1/4 tsp Black Pepper Wooden Barbecue Skewers (soaked in water for at least 10 minutes) 1.) Preheat barbecue. 2.) Whisk together all ingredients in medium bowl. Add chicken or lamb. Toss to evenly coat. Let marinate for one hour. 3.) Thread chicken or lamb onto wooden skewers. 4. Grill skewers for 10 minutes or until meat is crusty brown with no pink on the inside, turning after 5 minutes. 5.) Enjoy with lemon yogurt sauce (see below,) warm naan bread, shredded lettuce, sliced cucumbers, a sprinkle of feta cheese, and of course hot MOROCCAN MINT TEA. Lemon Yogurt Sauce 1 cup plain Greek Yogurt 1 Tbsp freshly chopped Mint leaves 1 clove crushed Garlic Zest and Juice of half a lemon Salt and Pepper to taste 1.) Whisk ingredients together in small bowl, refrigerate for 1 hour before serving
